Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

How to enjoy Robata

Robata Story

01

Choose your seat: counter or round table

Across 90 seats there are counter seats, round tables, three table private rooms for six each, and two tatami private rooms for up to 30. For a close view of the straw flames, take the counter.

02

Straight off the fire, taste it plain

Begin at the surface, wrapped in the fragrance of straw. The first plain mouthful tells you what the bonito and the Omi beef taste like on their own.

03

Move through the course with salt and citrus

Partway through, bring in condiments, rock salt and citrus. On the Shiga Mankitsu course, ten dishes at 6,050 yen, the meal runs on to Kurao pork and Omi duck junjun.

04

A cup after walking Hikone Castle

Hikone Castle, Genkyuen and Yumekyobashi Castle Road are a two minute walk back from JR Hikone Station. Our staff suggest the Shiga sake that suits your sashimi or straw-grilled plate.

Welcome to all those seeking a special experience in Hikone. We proudly offer dishes that maximize the bounty of the seasons, highlighted by our signature straw-roasted bonito shipped directly from Kochi, prepared using the traditional Tosa warayaki method, and Omi beef, the pride of Shiga Prefecture. Whether it's for important business entertainment, a reunion with old friends, a family anniversary, or a banquet with close companions, we understand that choosing the perfect course to color your special occasion can sometimes be a challenge.

Do you find yourself wondering, Which course will please all the attendees? It's for business, so I'd like to talk at leisure in a quiet private room, or It's a reunion, so we want to be a bit lively but still gather around delicious food? Please rest assured. In this article, we will delve into the charm of our cuisine and space, offering tips from a chef's perspective to help you find the course that perfectly matches your purpose and preferences.

An Exquisite Feast Featuring Straw-Roasted Bonito from Kochi

The moment you open our doors, you're greeted by the fragrant aroma of straw. This is the sign that our signature dish, straw-roasted bonito from Kochi, is being prepared. We take exceptionally fresh bonito, delivered directly from the fishing ports of Kochi, and our skilled chefs sear each piece one by one, enveloping it in roaring flames.

Fragrance and Umami Drawn Out by the Flames

Warayaki, or straw-roasting, is a traditional Tosa cooking method that instantly sears the surface of the bonito, locking in its umami and imparting a unique, smoky fragrance. The texture—moist on the inside, crisp and aromatic on the outside—provides an unforgettable culinary experience. This straw-roasted bonito is a masterpiece we hope you will enjoy, no matter which course you choose.

  • Pairing with Condiments: The straw-roasted bonito reveals even deeper flavors when paired with various condiments. Enjoy it with classic garlic slices, green onions, and myoga ginger, or add a touch of seasonal citrus for an exquisite match.
  • Salt-Seared or Sauce-Seared: You have the choice to savor the natural umami of the bonito with a simple salt seasoning or enjoy it refreshingly with our special ponzu sauce.
  • Pairing with Sake: The fragrant straw-roasted bonito pairs wonderfully with crisp, dry sake. We highly recommend trying it with local sake from Shiga.

Courses to Enjoy Hikone's Pride, Omi Beef, and Seasonal Flavors

Alongside our straw-roasted bonito from Kochi, we are proud to present Omi beef, counted among Japan's top three wagyu brands. Raised in a rich natural environment, Omi beef is characterized by its fine texture and the sweet, melting quality of its fat. At our restaurant, we incorporate it into our courses using a variety of cooking methods designed to bring out its full potential.

Diverse Ways to Savor Carefully Selected Omi Beef

The tenderness and elegant umami of Omi beef shine in a wide range of dishes. While you can savor its pure flavor simply as a steak or lightly seared, it is also exceptional in stews and hot pots that slowly draw out its rich taste. Why not choose a course featuring Omi beef for your special banquet, business dinner, or reunion in Hikone?

  • Omi Beef Steak: We carefully grill perfectly marbled cuts, allowing you to fully indulge in the meat's intrinsic umami.
  • Seared Omi Beef Sushi: Lightly seared Omi beef that melts in your mouth, served as nigiri sushi. A truly luxurious bite.
  • Mini Hot Pot with Omi Beef and Seasonal Vegetables: During the cooler months, we recommend a warm mini hot pot with a broth richly infused with the umami of Omi beef.
