Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

How to enjoy Robata

Robata Story

01

Choose your seat: counter or round table

Across 90 seats there are counter seats, round tables, three table private rooms for six each, and two tatami private rooms for up to 30. For a close view of the straw flames, take the counter.

02

Straight off the fire, taste it plain

Begin at the surface, wrapped in the fragrance of straw. The first plain mouthful tells you what the bonito and the Omi beef taste like on their own.

03

Move through the course with salt and citrus

Partway through, bring in condiments, rock salt and citrus. On the Shiga Mankitsu course, ten dishes at 6,050 yen, the meal runs on to Kurao pork and Omi duck junjun.

04

A cup after walking Hikone Castle

Hikone Castle, Genkyuen and Yumekyobashi Castle Road are a two minute walk back from JR Hikone Station. Our staff suggest the Shiga sake that suits your sashimi or straw-grilled plate.

The Secret to a Successful Business Dinner in Hikone: Choosing an Izakaya by Its Ingredients

How to Ensure a Successful Business Dinner in Hikone: The Art of Choosing an Izakaya Based on its Ingredients

Are you struggling to decide where to host an important business dinner or a special meal in Hikone? Choosing the right restaurant is crucial to ensure your guests are genuinely pleased and have a fruitful time. Food, in particular, is a major factor that defines the atmosphere of any gathering. Fresh, high-quality ingredients and the dishes that make the most of them are the best tools for sparking conversation and conveying respect to your guests. We strive daily to help ensure the success of your business dinners in Hikone by providing an unforgettable experience through our thorough commitment to ingredients. In this column, we will delve deeper into the importance of this commitment to ingredients and the value it brings when selecting an izakaya for business dinners in Hikone.

For Those Who Can't Afford to Fail When Choosing a Restaurant in Hikone

The term business dinner can encompass a wide range of objectives. It could be a meal with a client, a venue to entertain a supervisor or superior, or an important occasion to welcome guests from afar. Whatever the situation, the common threads are a strong desire to succeed and a sincere wish for the guests to have a wonderful time. The restaurant's atmosphere, service, and above all, the quality of the food, significantly influence the success of the event. The topic of food is especially important as it can be a great conversation starter. It goes without saying that where and what you eat can positively impact your business and personal relationships. To meet and exceed these expectations, we allow no compromises in our daily operations, from sourcing ingredients to their final preparation.

While Hikone has numerous dining establishments, only a limited number can cater to the special needs of business entertainment. The availability of private rooms, the smoking environment, the quality of the cuisine, the speed of service, and the staff's attentiveness—all these elements must be perfectly balanced. The restaurant's flexibility is especially tested in situations requiring delicate considerations, such as a guest's preferences or allergies. We promise to cater to each customer's individual needs and provide the highest level of hospitality. We have made various preparations so that you can use our services with peace of mind, even for your first business dinner in Hikone.

To ensure a successful business dinner, we prioritize the following three points:

  • Providing the optimal space tailored to the customer's purpose (a full range of private rooms)
  • Heartfelt and attentive service (staff responsiveness and hospitality)
  • Memorable and impressive cuisine (commitment to ingredients and expert craftsmanship)

Our Pride as an Izakaya for Business Dinners in Hikone: A Thorough Commitment to Ingredients

Our cuisine is more than just delicious. We cherish the story within each ingredient, the passion of the producers behind it, and the precious moment of seasonality. As an izakaya for business dinners in Hikone, we believe that ingredient selection is the most critical element in providing our guests with the best possible experience. By carefully selecting ingredients that combine freshness, safety, and regional character, we are confident that we can deliver a dish that cannot be found elsewhere. Our mission is to create a special time and space that remains in our customers' hearts through our food.

Exceptionally Fresh! Our Passion for the Hikone Seafood That Arrives Daily

Our greatest pride is, without a doubt, our exceptionally fresh seafood. By sourcing directly from fishing ports across Japan—including the Sea of Japan, the Pacific Ocean, and the Seto Inland Sea—we are able to provide our customers with Hikone seafood in its absolute best condition. We are particularly committed to the following points:

  • Expert Selection Through Direct Daily Sourcing: Our experienced professionals visit the market every morning to handpick the best seafood of the day. We are constantly in pursuit of the finest materials, from seasonal fish to common varieties and even rare seafood not often seen. This refusal to cut corners is the secret to our uniquely fresh seafood dishes.
  • Thorough Freshness and Quality Control: By minimizing the distribution route from the port to our restaurant, we maintain the just-caught freshness. We also have rigorous in-store storage methods, paying close attention to every detail to ensure freshness is not lost until the moment it reaches our customers' mouths. Through optimal handling tailored to each type of seafood, including temperature and humidity control, we bring out the natural umami of the ingredients.
  • Skilled Cooking Methods that Enhance the Ingredients: Even the best ingredients can lose their charm if cooked improperly. Our chefs bring out the maximum flavor of the ingredients by choosing the optimal cooking method—sashimi, grilling, simmering, or frying—based on the type and condition of the fish. Our sashimi, in particular, is expertly prepared and beautifully arranged to allow you to fully enjoy the fish's natural flavor and texture. We believe visual beauty is also an important element of hospitality.

When a fresh and beautiful sashimi platter is served at a business dinner, the atmosphere instantly becomes more vibrant. Our greatest joy and the driving force for our next sourcing trip are our customers' smiles and their words of praise. The rich blessings of the sea will spark conversation and help create a special time.

Local Delicacies Nurtured by the Blessings of Lake Biwa and Shiga's Fertile Land

Shiga Prefecture is a treasure trove of ingredients, blessed by Lake Biwa and its rich natural surroundings. With a desire to fully convey the charm of our local area to our customers, we actively incorporate ingredients from Shiga Prefecture. This is another aspect of our commitment as an izakaya for business dinners in Hikone and a sign of our respect for the region.

  • Omi Beef: As one of Japan's top three wagyu brands, Omi beef is characterized by its fine texture and sweet, melt-in-your-mouth fat. We offer carefully selected Omi beef prepared in various ways. You can enjoy it as a steak that melts in your mouth, a fragrant seared dish, or, depending on the season, in a sukiyaki style to suit your preference. As the star of your business dinner, Omi beef is sure to satisfy your guests. Its deep flavor will surely become an unforgettable memory.
  • Lake Biwa's Endemic Species and Lake Fish Cuisine: Depending on the season, we also offer rare lake fish caught in Lake Biwa, such as Biwa trout, moroko, and suji-ebi shrimp, which are hard to find elsewhere. These special dishes allow you to experience Shiga's unique food culture. Packed with the wisdom and techniques of people who have long lived alongside Lake Biwa, our lake fish cuisine offers an opportunity to savor the history and culture of Shiga.
  • Fresh Vegetables from Local Farmers: We source freshly picked vegetables from our partner farmers in and around Hikone. These vegetables, rich with the aroma of the earth, not only taste great on their own but also add a vibrant touch of color to our dishes. Our cuisine, which makes generous use of seasonal vegetables, is also popular with health-conscious customers. Their crisp, fresh texture invigorates the entire meal.

Allowing guests to experience the culture and climate of Hikone through local ingredients is one of the true pleasures of a business dinner. We put the grandeur of Lake Biwa, the rich nature of Shiga, and the warmth of the people nurtured there into every single dish we serve.

A Space for Peace of Mind and Relaxation: The Appeal of Being an Izakaya in Hikone with Separate Smoking and Private Rooms

For a successful business dinner, creating a space where guests can truly relax is just as essential as the taste of the food. We pay meticulous attention to creating a comfortable environment, ensuring that every detail is considered for our guests' comfort.

  • Table-style Private Rooms: For guests who prefer Western-style table seating, we also offer private table rooms. We have paid close attention to the comfort of the chairs to ensure you have a pleasant time. These rooms can also be used for formal dinners in a modern atmosphere.
  • Flexibility and Privacy: Our private rooms are separated by walls or fusuma sliding doors, allowing you to focus on important conversations without being disturbed by the surrounding noise. We have also considered soundproofing, so you can feel secure when discussing confidential business matters or private topics. Please enjoy your meal and conversation to the fullest in your own special space.

Using a private room is a subtle gesture of consideration that makes your guests feel valued. Our staff is always ready to propose the best private room to suit your situation.

A Comfortable Environment as an Izakaya in Hikone with a Separate Smoking Area

In today's world of diverse attitudes toward smoking, we strive to create a comfortable environment for all our customers by operating as an izakaya in Hikone with a separate smoking area. We aim to provide a pleasant space for both diners and smokers.

  • Implementation of a Complete Separation Policy: We have a dedicated smoking room designed to prevent smoke from drifting into other areas. The dining spaces are completely non-smoking, allowing you to enjoy your meal without worrying about the smell of smoke. This environment is safe and comfortable for guests with children or those who are sensitive to tobacco smoke.
  • Installation of High-Performance Air Purifiers: The smoking room is equipped with high-performance air purifiers to thoroughly remove smoke and odors. The ventilation system is also checked regularly to maintain a clean and comfortable environment, ensuring that non-smoking guests can also dine with peace of mind. You don't have to worry about the smell of tobacco leaking into other areas.

Our consideration for a separate smoking area is a vital part of our efforts to ensure that all our customers with diverse needs can use our establishment with peace of mind. We never forget the small details, so that every single guest can fully enjoy their meal and conversation.

Practical Steps to Make the Most of Our Izakaya for Your Business Dinner in Hikone

Based on our commitments detailed so far, here are some concrete steps and a checklist to help you ensure a successful business dinner in Hikone. By following these steps, you can approach your dinner with confidence and achieve the best possible outcome. Solid preparation will lead to a smooth event and allow you to offer your guests genuine hospitality.

Step 1: Clarify the Purpose of the Dinner and Gather Information About Your Guests

First, clarify the purpose of the business dinner and gather as much information as possible about your guests. This is the first step to success. Putting yourself in your guests' shoes is the key.

  1. Purpose of the Dinner: Set a specific goal, such as signing a contract, building a relationship, expressing gratitude, showing appreciation, or fostering camaraderie. A clear purpose will help you make more appropriate choices, from the restaurant to the course menu.
  2. Number and Profile of Participants: Understand who the guest of honor is, the total number of people, the age range, and the male-to-female ratio. This will help you adjust the size and atmosphere of the private room.
  3. Guest of Honor's Preferences, Allergies, and Smoking Habits: If you know this in advance, making requests to the restaurant will be much smoother. Be sure to confirm their likes and dislikes, any food allergies, preferred types of alcohol, and smoking habits. This is extremely important for conveying your detailed consideration for them.
  4. Budget: Deciding on a per-person budget will make it easier to choose a restaurant and a course menu. Our staff will be happy to consult with you to provide the best experience within your budget.

Step 2: Make a Reservation and Discuss the Details with Us

Once you have organized the purpose and guest information, please contact us to make a reservation or inquiry. By providing us with these details at that time, we can propose the best plan for you. Please do not hesitate to consult with us about anything, no matter how small.

  • Reservation Timing: Please contact us as soon as the date for the dinner is set. Private rooms are particularly popular and may not be available if you book at the last minute. Booking early is the best way to secure the room you want.
  • Specify a Private Room: Let us know your preference for a horigotatsu or table-style room, as well as the desired size, according to the number of people and the purpose. We will make the most of our advantages as an izakaya in Hikone with private rooms to secure your private space.
  • Select and Adjust the Course Menu: Let us know your budget and the guest of honor's preferences in advance to discuss the content of the course menu. We can flexibly accommodate requests such as allergy considerations or changing ingredients they dislike. Also, let us know specific requests, such as whether to feature Hikone seafood or Omi beef as the main dish.
  • Discuss Drinks: Let us know if you are interested in an all-you-can-drink plan or have a request for a specific brand of alcohol. A wide variety of drinks enhances the satisfaction of a business dinner.
  • Consideration for Smokers: If there are smokers in your party, let them know we have a smoking room as an izakaya in Hikone with a separate smoking area to provide them with peace of mind. It is important to create an environment where everyone can be comfortable.
  • Other Requests: Feel free to consult with us about detailed requests, such as preparing a dessert plate for a celebration, arranging for souvenirs, or booking a taxi. We will do our utmost to support your wishes.

When making a reservation, clearly stating that you wish to use our restaurant for a business dinner will allow our staff to provide even more attentive service. Your success is our pleasure.

Step 3: Final Checks and Thoughtful Gestures on the Day

Here are some things to double-check and thoughtful gestures to keep in mind on the day of the dinner before heading to the restaurant. Attention to detail is what will determine the success of your event.

  1. Confirm the Time: Reconfirm the meeting time and your arrival time at the restaurant, and plan to act with plenty of time to spare. It is best to arrive early to avoid keeping the guest of honor waiting.
  2. Confirm Seating Arrangements: In a private room, deciding in advance who will sit where will make things smoother. Seating based on the positions of honor (kamiza and shimoza) is standard, but sometimes it is important to be flexible out of consideration for your guests.
  3. Prepare a Gift: If necessary, do not forget to prepare a gift (temiyage). We can hold it for you at the restaurant, so please consult with us in advance.
  4. Confirm the Payment Method: Confirm in advance who will be paying, whether a corporate card will be used, and if a receipt is needed. A smooth payment process can affect the impression of the dinner. It is also important to time it so that your guests do not see the payment being made.
  5. A Feeling of Gratitude: Above all, the most important things are your feelings of gratitude toward your guests and a mindset of enjoying the occasion. Greet them with a smile and strive to create a friendly atmosphere. Your heartfelt hospitality will surely be conveyed to your guests.

By making these thorough preparations, you can approach the business dinner with confidence and make the best possible impression on your guests. Similar preparations will also be useful for gatherings near Hikone Station. The best ingredients, a wonderful space, and your thoughtful consideration will create a special day.
