Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

01

Robata & Warayaki

04

Shiga's specialty Omi beef, straw-grilled or miso-marinated, and overnight-dried Omi chicken. Enjoy Shiga's premium ingredients dynamically over charcoal in Hikone.

05

How to enjoy Robata

Robata Story

01

Choose your seat: counter or round table

Across 90 seats there are counter seats, round tables, three table private rooms for six each, and two tatami private rooms for up to 30. For a close view of the straw flames, take the counter.

02

Straight off the fire, taste it plain

Begin at the surface, wrapped in the fragrance of straw. The first plain mouthful tells you what the bonito and the Omi beef taste like on their own.

03

Move through the course with salt and citrus

Partway through, bring in condiments, rock salt and citrus. On the Shiga Mankitsu course, ten dishes at 6,050 yen, the meal runs on to Kurao pork and Omi duck junjun.

04

A cup after walking Hikone Castle

Hikone Castle, Genkyuen and Yumekyobashi Castle Road are a two minute walk back from JR Hikone Station. Our staff suggest the Shiga sake that suits your sashimi or straw-grilled plate.

Kochi-Direct Bonito Seared with Straw: A Safe Dining Experience in Hikone

Hikone: Enjoy Kochi-Direct Bonito Seared with Straw to your heart's content. Our Commitment to Food Safety

In Hikone, we aspire to offer everyone the finest dining experience. Our signature dish, fresh bonito directly from Kochi Prefecture, boldly seared over straw, is particularly popular among our guests. However, some guests with food allergies might hesitate to dine out.

I want to eat delicious food, but I'm worried about allergies... It's a special banquet or business dinner, but I don't want to bother others... To ensure that all our guests can truly enjoy their meals without such concerns, our restaurant is sincerely committed to addressing food allergies. This column introduces our specific initiatives and efforts to provide you with a safe and special dining experience in Hikone.

To Safely Enjoy Kochi-Direct Bonito Seared with Straw

We strongly wish for each and every guest to savor our dishes to their heart's content. Among them, our Kochi-Direct Bonito Seared with Straw, which we proudly offer, is an exquisite dish condensed with aroma and umami. However, food preferences and constitutions vary from person to person. For guests with food allergies, dining out can often be a significant hurdle.

  • Unable to fully enjoy a meal with friends or a business dinner with important guests, due to concerns about personal allergies or those of dining companions.
  • When planning a special banquet in Hikone, struggling with restaurant and menu selection due to participants having allergies.
  • Hesitating to ask staff for confirmation every time because the menu alone is not sufficient for judgment.

We believe that resolving these anxieties and concerns of our guests, and ensuring that everyone can gather around our proud dishes, including Kochi-Direct Bonito Seared with Straw, with smiles, is one of our most important missions.

Our Specific Allergy Initiatives: Our Restaurant's Consideration for Food Safety

To ensure our guests can dine with peace of mind, our restaurant adopts a multifaceted approach to allergy management. We don't just display allergens; we are committed to meticulous care from reservation to serving.

Thorough Pre-Booking Interviews and Information Sharing

When prioritizing our guests' safety, pre-booking information sharing is paramount. During reservations, we meticulously inquire about food allergies and have established a system to share this information across the entire establishment.

  • Detailed Allergy Item Confirmation: We ask for specific items that cause allergies, not just egg allergy, but detailed information such as is egg okay if heated? or do symptoms appear even with trace amounts? based on the guest's situation.
  • Severity of Symptoms Confirmation: By confirming the severity of past symptoms, such as anaphylaxis, we can consider more stringent measures.
  • Consideration for Cross-Contamination: We explain the possibility of allergen contamination during the cooking process and discuss all possible countermeasures with the guest's understanding and cooperation.
  • Information Sharing System: Information gathered during reservations is reliably transmitted to all relevant personnel within the restaurant, from kitchen staff to hall staff. By sharing information in meetings and using dedicated check sheets, we prevent communication oversights and accurately manage guest information. Even for large banquets or business dinners in Hikone, we ensure that information from the organizer is securely shared among staff, striving for all participants to enjoy their meal with peace of mind.

Meticulous Attention and Innovation in the Kitchen

Based on the allergy information received from our guests, cooking in the kitchen is performed with the utmost care.

  • Use of Dedicated Cooking Utensils: When allergy accommodations are required, we use dedicated cooking utensils (cutting boards, knives, bowls, etc.) whenever possible to avoid contact with allergen ingredients. After use, thorough cleaning and sanitization are performed to ensure safety for subsequent use.
  • Separation of Cooking Spaces: If possible, we physically separate cooking spaces for allergen ingredients and other ingredients, or divide time slots, to minimize the risk of cross-contamination. Especially when preparing Kochi-Direct Bonito Seared with Straw, we cook for guests with allergies with the utmost care to prevent contact with other ingredients. We strive to ensure safety, such as considering the use of dedicated grilling spaces or cooking utensils, to prevent allergen dispersion even amidst the straw flames.
  • Innovative Ingredient Storage Methods: Allergen ingredients and non-allergen ingredients are clearly distinguished, for example, by storing them in sealed containers and separating their storage locations, reducing the risk of accidental mixing. For instance, in the preparation of our proud Omi beef, we thoroughly label allergens in sauces and seasonings, and are prepared to suggest alternative seasonings according to our guests' requests.
  • Enhanced Awareness Among Cooking Staff: All cooking staff receive regular training and share awareness to possess deep knowledge of food allergies and always perform cooking with the utmost care. Even during plating, we pay meticulous attention to prevent contact with allergen ingredients.

Consideration in Menu Development and Offering

Allergy accommodation is considered not only in daily cooking but also from the menu development stage.

  • Thorough Allergen Labeling: For each menu item, we strive to provide as much information as possible regarding the 7 specified allergens (eggs, dairy, wheat, buckwheat, peanuts, shrimp, crab) and 21 allergens equivalent to specified raw materials.
  • Proposal of Alternative Menus and Cooking Methods: Even for menus containing specific allergens, we devise ways to increase options for guests to enjoy with peace of mind by using alternative ingredients or changing cooking methods within possible limits. For example, even for banquet courses in Hikone where multiple dishes are served, we can suggest individual alternative menus for guests with allergies.
  • Allergen Check during New Menu Development: When developing new menus, we always thoroughly check allergen information and strive for a menu composition that considers guests with allergies.
  • Reflecting Guest Feedback: We sincerely accept feedback and requests from our guests as valuable information for future allergy accommodation improvements and will utilize them to enhance our menus and services.

Smart Allergy Accommodation for Banquets, Business Dinners, and Reunions in Hikone

For large gatherings, allergy accommodation can become even more complex. Our restaurant is committed to meticulous care to ensure all guests can enjoy themselves comfortably, even in situations like banquets, business dinners, and reunions in Hikone.

Hikone Banquet Courses with Individual Accommodations

Our banquet courses, rich in seasonal ingredients and vibrant in presentation, create special moments in Hikone. If there are guests with allergies, we will provide individual accommodations as much as possible if consulted in advance. We strive to ensure everyone can share smiles at the same table by modifying parts of the course dishes or preparing allergen-free alternative menus. Organizers can facilitate smoother service by providing detailed allergy information of participants when making reservations.

Special Moments in Private Tatami Rooms, Ideal for Business Dinners in Hikone

Business dinners in Hikone, when hosting important clients, require meticulous attention. Our restaurant offers private tatami rooms where guests can relax in a private space, allowing even those with allergies to enjoy their meals with peace of mind. In a private room, you can directly consult our staff about allergies without worrying about others, and the provision of allergy-friendly meals can proceed smoothly. We prioritize our guests' health and safety and will provide hospitality down to the finest detail, so please consider our restaurant as the ideal izakaya for business dinners in Hikone.

Everyone Smiles at Hikone Reunions Too

Reunions, where old friends meet after a long time, are meant to be lively with catching up and delicious food. However, as the number of participants increases, the issue of food allergies becomes unavoidable. Our restaurant has established a pre-consultation system to alleviate the burden on organizers planning reunions in Hikone. Even if participants have different allergies, we will consider individual accommodations as much as possible and propose plans where everyone can enjoy their meal with peace of mind. We will help you create a memorable reunion, reminiscing old stories while gathered around Kochi-Direct Bonito Seared with Straw.

Practical Steps to Ensure Peace of Mind Before Your Visit

While our restaurant will provide the utmost consideration, your cooperation can help us achieve an even safer and more comfortable dining experience. We recommend checking the following steps before your visit.

Specific Confirmation Points During Reservation

  1. Clearly Communicate Allergen Ingredients and Symptoms: Please inform our staff specifically which ingredients cause what kind of allergy symptoms (e.g., hives, difficulty breathing, diarrhea). Detailed information, such as whether symptoms appear even with trace amounts or if heated cooking is acceptable, enhances the accuracy of our response.
  2. Consult About Desired Menu Items, Including Kochi-Direct Bonito Seared with Straw: If there is a particular menu item you wish to eat, please consult us in advance about whether it can be accommodated for allergies or what alternatives are available. We will also carefully check if the main Kochi-Direct Bonito Seared with Straw might contain allergens in its seasonings or garnishes.
  3. Consult About Alternative Menus or Cooking Methods if Possible: If there are dishes containing allergens, please consult us about whether changes to other ingredients or cooking methods (e.g., grilling fried food, not using specific seasonings) are possible.
  4. Communicate the Occasion: Please inform us what kind of occasion your visit is for, such as a banquet, business dinner, or reunion. For large groups, it will be smoother if the organizer provides comprehensive allergy information for all participants. If you desire a private tatami room in Hikone, please also inform us.
  5. Share Past Experiences or Concerns: If you have had any difficult experiences dining out in the past or have any particular concerns, please do not hesitate to tell us. Your feedback is valuable information that will lead to future service improvements.

Feel Free to Speak Up on the Day of Your Visit

Even if you have informed us about allergies during your reservation, we will conduct a final confirmation on the day of your visit. If you have any concerns or changes, please do not hesitate to speak to our staff. If you have any questions about the dishes served, please confirm with our staff immediately. Your safety and peace of mind are our top priorities.
