Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

How to enjoy Robata

Robata Story

01

Choose your seat: counter or round table

Across 90 seats there are counter seats, round tables, three table private rooms for six each, and two tatami private rooms for up to 30. For a close view of the straw flames, take the counter.

02

Straight off the fire, taste it plain

Begin at the surface, wrapped in the fragrance of straw. The first plain mouthful tells you what the bonito and the Omi beef taste like on their own.

03

Move through the course with salt and citrus

Partway through, bring in condiments, rock salt and citrus. On the Shiga Mankitsu course, ten dishes at 6,050 yen, the meal runs on to Kurao pork and Omi duck junjun.

04

A cup after walking Hikone Castle

Hikone Castle, Genkyuen and Yumekyobashi Castle Road are a two minute walk back from JR Hikone Station. Our staff suggest the Shiga sake that suits your sashimi or straw-grilled plate.

Seasonal ingredients, which change with the passing of the seasons, are the true essence of Japanese food culture. We carefully select the most delicious ingredients of each season and offer monthly changing courses meticulously crafted by our chef. From wild vegetables and fresh seafood in spring, refreshing summer vegetables in summer, mushrooms and fatty saury in autumn, to hot pot dishes in winter, you can enjoy the profound flavors unique to each season.

Premium Courses to Celebrate Special Days

For special milestones in life, such as birthdays, anniversaries, or promotion celebrations, a slightly luxurious premium course is recommended. Prepared with carefully selected premium ingredients, each dish is meticulously crafted to deliver unforgettable impressions. Kochi-Direct Bonito Seared Over Straw and Omi Beef: Savoring Exquisite Delicacies

Our cuisine is born from our meticulous attention to ingredients. In particular, our two signature dishes, 'Kochi-direct Bonito Seared Over Straw' and 'Omi Beef,' are exquisite items you absolutely must try, as they are rarely found elsewhere. These dishes will vividly color your memories at our Hikone private room izakaya.

The Fragrance Woven by Flames: Kochi-Direct Bonito Seared Over Straw

'Warayaki' (straw-searing) is a traditional cooking method where fresh bonito, directly delivered from Kochi, is instantly grilled over powerful flames. The aroma of the straw maximizes the umami of the bonito, resulting in a fragrant skin and moist flesh. The rich aroma and melt-in-your-mouth texture the moment it reaches your palate are pure bliss. Enjoy it with ponzu, our special garlic soy sauce, and condiments for an even deeper flavor.

Warayaki is more than just grilling. Skilled artisans determine the perfect flame intensity, searing the surface to a crisp fragrance while sealing in the bonito's natural umami, cooked at an exquisite timing. This dish, created amidst rising heat and smoke, can truly be called a feast for all five senses.

The Pride of Japan's Three Great Wagyu: Omi Beef

And another exquisite specialty that Shiga boasts is 'Omi Beef.' Known as one of Japan's representative brand wagyu due to its long history, Omi beef is characterized by its fine texture and the sweet, melt-in-your-mouth fat. We offer this Omi beef prepared in various ways to ensure you enjoy it at its most delicious.

  • Seared Omi Beef Sushi: The umami of the meat and the sweetness of the fat, brought out by light searing, harmonize exquisitely with the sushi rice. The melt-in-your-mouth texture is truly impressive.
  • Omi Beef Steak: Luxuriously thick-cut Omi beef, served with a superb doneness. Enjoy the powerful umami of the meat itself and the harmony of its melting fat. We recommend savoring it simply with wasabi or rock salt.
  • Omi Beef Tataki: Seared on the outside to a fragrant crisp and rare on the inside, the tataki allows you to fully appreciate the umami of the red meat. It pairs exceptionally well with our special sauce.

These dishes are not only delicious but also allow you to experience the unique food culture of Hikone.

A Drink to Color Hikone's Night: Shiga's Local Sake and Carefully Selected Drinks

Excellent cuisine demands excellent drinks to match. To enrich your Hikone private room izakaya experience, we offer a wide selection of carefully chosen beverages, including 'Shiga's local sake,' nurtured by Shiga's rich natural environment.

Shiga's local sake, brewed using the clear waters of Lake Biwa and the Suzuka Mountains, and rice grown in fertile land, is highly acclaimed nationwide. With various types ranging from dry and crisp to rich and aromatic, it pairs excellently with our dishes. Our staff are well-versed in the characteristics of each local sake and will suggest the best choice to match your preferences and the dishes you are enjoying.

For instance, you can enjoy the exquisite pairing of food and sake, such as a crisp, dry local sake with bonito seared over straw, or a junmai sake that lets you fully appreciate the richness of rice with seared Omi beef sushi.

  • Local Hikone Sake: We offer local sake brewed in breweries within Hikone City, unique to this region. Please experience a drink you can only savor here.
  • Seasonal Limited Sake: We regularly stock special seasonal sake, such as freshly pressed new sake in winter and refreshing unpasteurized sake in summer. Enjoy seasonal sake along with seasonal delicacies.
  • Diverse Sake Varieties: We boast a rich selection of sake types, including Junmai Daiginjo, Junmai Ginjo, Junmai, and Honjozo. Tasting sets are also available, allowing you the pleasure of discovering your favorite flavors.

In addition to sake, we offer a wide range of drinks including shochu, beer, wine, fruit liqueurs, and soft drinks. Even those who don't prefer alcohol or are driving can enjoy their meal with peace of mind. With your favorite drink in hand, please spend a wonderful evening at our Hikone private room izakaya.
