Our story
Located in the heart of Hikone, Shiga, Uomaru is a seafood izakaya where fresh fish and carefully selected sake meet the craft of robatayaki grilling.
Sashimi finished by skilled hands from fish delivered straight from the port, bonito from Kochi, and Omi beef from Shiga — grilled dynamically right before you over straw and charcoal.
A calm Japanese space with lively counter seats and relaxing private rooms — for dates, family dinners, and company banquets alike.
Commitment
In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.
Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.
We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.
Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.
Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.
A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

How to enjoy Robata
How to enjoy straw-grilling and robata
Across 90 seats there are counter seats, round tables, three table private rooms for six each, and two tatami private rooms for up to 30. For a close view of the straw flames, take the counter.
Begin at the surface, wrapped in the fragrance of straw. The first plain mouthful tells you what the bonito and the Omi beef taste like on their own.
Partway through, bring in condiments, rock salt and citrus. On the Shiga Mankitsu course, ten dishes at 6,050 yen, the meal runs on to Kurao pork and Omi duck junjun.
Hikone Castle, Genkyuen and Yumekyobashi Castle Road are a two minute walk back from JR Hikone Station. Our staff suggest the Shiga sake that suits your sashimi or straw-grilled plate.

Wine pairing at a cafe? You might be surprised. While many cafes focus on coffee, tea, and light snacks, we want our customers to enjoy the marriage of authentic wine and food in the comfort of a cafe setting. It's precisely because cafes are a part of your busy daily life that we wish to offer a touch of luxury and discovery. With this in mind, our cafe is dedicated to wine pairing, proposing carefully selected wines and the perfect dishes to accompany them.
From a casual glass at lunchtime to a special course meal at dinner, we create a variety of scenes enhanced by wine. We don't just serve wine; we bring out the best in each dish, delivering a joy that engages all five senses. This is our vision for a new cafe experience. Whether it's a date with a friend, an anniversary with a loved one, or a small daily reward for yourself, we hope our cafe's wine pairings can help create unforgettable moments for you.
The combination of wine and food seems profound, but honestly, it's too complex for me to understand. I want to drink delicious wine, but I get lost trying to choose one. You're not alone. In fact, one survey found that about 60% of people feel intimidated when choosing wine. Especially when selecting wine at a restaurant, the vast number of options and the perceived need for specialized knowledge can be daunting.
But rest assured. The wine pairings we propose at our cafe are designed so that anyone can casually experience their charm, even without expert knowledge. We consider it our mission to help you discover the depth of wine and make your dining experience even more enjoyable. Our sommeliers and staff will carefully guide you, so you can fully enjoy the harmony of wine and food, valuing your intuition and personal preferences without being tied down by complicated rules.
We want to offer wine pairing not as something stuffy, but as culinary entertainment that everyone can enjoy. Our sommeliers will suggest the perfect bottle or a selection of wines tailored to your preferences, mood, and chosen dishes. All you have to do is sit back and be thrilled by new flavor discoveries. Our cafe always has over 50 types of wine available, and we serve approximately 5,000 bottles to our customers annually. We strive to bring out the unique character of each wine and achieve the best possible harmony with our food.
At our cafe, we offer flexible and diverse wine pairings to suit a variety of occasions. We believe our approachable cafe atmosphere is the perfect place to explore the depths of wine without feeling intimidated.
You can also enjoy wine casually during your afternoon lunch break. For example, a fresh white or rosé wine is a perfect match for our salads made with plenty of fresh vegetables or our light pasta dishes. A sparkling wine enhances the refreshing qualities of light meals like sandwiches and quiches. Approximately 30% of our customers enjoy wine during lunch, treating themselves to a little luxury. We're here to add a special sparkle to your daily routine, whether it's a refreshing break from work or a lunch date with a friend.
In the evening, our cafe transforms into a cozy hideaway restaurant. Here, we offer authentic dinner course meals featuring carefully selected seasonal ingredients. To accompany these dishes, our sommelier provides a curated wine pairing for each course. Experience the ultimate marriage of food and wine, where each enhances the other—a rich red wine for meat dishes, a delicate white for fish, and a dessert wine to finish. At dinner, about 70% of customers who order a course meal also opt for the wine pairing.
For special occasions like an anniversary, a birthday surprise, business entertainment, or a date with someone special, we propose personalized pairings tailored to your requests and preferences. If you consult with us when making your reservation, we can even prepare a special wine list just for you. For guests using a private room, our sommelier will provide detailed explanations of the wines in a more intimate setting, allowing you to enjoy the stories behind each bottle. About 85% of our guests who celebrate an anniversary with us return for another occasion.
You can enjoy our cafe's wine pairings at home as well. We offer pairing sets so that when you order our popular menu items for takeout or delivery, you can also select a wine that goes with them. For example, we recommend a medium-bodied red wine from our selection to go with our slow-cooked beef stew. For parties and banquets with a large group, you can also have large-format bottles of wine or sparkling wine delivered.
For customers with children, we can also suggest non-alcoholic pairings that won't interfere with your meal. For private bookings, our sommelier will create a special wine list based on your event's theme and budget, ensuring a memorable wine experience for all attendees.
What kind of wine goes with this dish? To answer that question and provide our customers with the best experience, our cafe's sommelier is constantly researching the marriage of wine and food. Here are some of the sommelier's practical pairing tips and our cafe's unique approach.
The simplest and most straightforward rule of pairing is to match the color of the food and wine. For example, white wine goes well with light-colored dishes like seafood and chicken, while red wine is a good match for red meats like beef and lamb. Our sommelier values this basic principle while also making more nuanced suggestions. For instance, even with white fish, if it's prepared with herbs or a cream sauce, we might suggest a richer, oak-aged white wine, considering the cooking method and sauce flavors.
Another approach to wine pairing is to match the origin of the food and wine. For example, Italian food with Italian wine, or French food with French wine. Food and wine from the same region have developed in the same climate and soil, so they often have a natural affinity. At our cafe, we also serve creative dishes using Japanese ingredients, for which we propose Japanese wines or wines selected from around the world that harmonize with the flavors of the ingredients.
Matching the intensity of the food and wine's flavor is also crucial. The general rule is to pair a light salad with a light-bodied wine, and a rich-tasting stew with a full-bodied wine. If you pair a light dish with a heavy wine, the wine can overpower the food's flavor. Our sommelier keeps a wide range of wines on hand, from light and crisp to full-bodied and robust, to match your food choices. For example, for our signature Special Roast Beef, we recommend a red wine with strong tannins and rich fruitiness. On the other hand, for a fresh seafood ajillo, we suggest a crisp white wine with a distinct minerality.
In Japan, with its abundance of seasonal ingredients, embracing seasonality is essential for both cooking and wine pairing. We propose the best wines to match the changing seasons: light whites and rosés in spring reminiscent of fresh greenery; chilled sparkling wines and refreshing rosés in summer; aromatic red wines for autumn's seasonal mushrooms and game; and aged reds perfect for heartwarming stews in winter. Our cafe offers a rich variety of limited-time menus featuring seasonal ingredients, and our seasonal wine pairings are very popular.
Has the idea of wine pairing become a little less daunting? Here are the steps to experience wine pairing at our cafe. This guide will walk you through the process so that even first-timers can relax and enjoy themselves to the fullest.
We recommend making a reservation in advance, especially if you plan to visit during dinner, on a weekend, or for a special occasion like an anniversary or business entertainment. When you book, letting us know you're interested in wine pairing will help us serve you more smoothly. After you arrive and look at the menu, please don't hesitate to ask our sommelier or staff if you're unsure. We'll help you find the perfect wine with simple questions like, What are you in the mood for today? or What kind of food would you like to pair it with? Of course, we are also happy to discuss your budget.
Our cafe offers different menus and pairings for lunch, cafe time, and dinner. For lunch, you can enjoy wine by the glass or a half bottle that pairs well with light plates and sandwiches. At dinner, our course pairing is a popular choice, allowing you to enjoy several different wines matched to each dish, from appetizer to dessert. We will propose the best options based on your length of stay and purpose of visit.
If you want to fully experience the charm of wine pairing, we recommend our pairing set that comes with a course meal. A different wine is served with each dish, allowing you to fully enjoy the moving harmony created by the food and wine. Of course, you can also choose a few dishes you're interested in from the à la carte menu and consult our sommelier to select wines that match. For instance, we can help you fulfill your desires to eat and drink by pairing an à la carte fish dish with a dry white wine and a meat dish with a medium-bodied red.
If you prefer a more private setting, please consider using one of our private rooms. There, you can focus on the wine and food without any distractions. For private bookings for banquets or parties, we can create a custom pairing based on the attendees' preferences and the event's theme. Furthermore, when you enjoy our food at home via takeout or delivery, you can purchase a well-matched wine to go with it. Why not brighten your dining table at home with our cafe's wine pairings?
So, what did you think? We hope you've come to see that wine pairing in a cafe setting can be a far deeper and more enjoyable experience than you might have imagined. We want to share information that our customers find interesting and useful and deliver the joy of food that wine pairing brings to as many people as possible.
At our cafe, we don't just serve delicious food and wine; we aim to create a rich, emotional experience for our customers through the stories behind them and the magic of pairing. From a single glass that brightens your lunch break to a full-fledged pairing with a dinner course, and special wines to enhance an anniversary or birthday surprise, we offer the perfect suggestions for every scene. Whether it's a date, business entertainment, a meal with children, a private banquet, or via delivery and takeout, we strive to provide a rich time with wine that fits your lifestyle.
Wine pairing is not difficult at all. Our sommelier will work closely with each customer to help you find that perfect bottle. Please come and try a new culinary experience that goes beyond the bounds of a typical cafe. We sincerely look forward to welcoming you.
