Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

How to enjoy Robata

Robata Story

01

Choose your seat: counter or round table

Across 90 seats there are counter seats, round tables, three table private rooms for six each, and two tatami private rooms for up to 30. For a close view of the straw flames, take the counter.

02

Straight off the fire, taste it plain

Begin at the surface, wrapped in the fragrance of straw. The first plain mouthful tells you what the bonito and the Omi beef taste like on their own.

03

Move through the course with salt and citrus

Partway through, bring in condiments, rock salt and citrus. On the Shiga Mankitsu course, ten dishes at 6,050 yen, the meal runs on to Kurao pork and Omi duck junjun.

04

A cup after walking Hikone Castle

Hikone Castle, Genkyuen and Yumekyobashi Castle Road are a two minute walk back from JR Hikone Station. Our staff suggest the Shiga sake that suits your sashimi or straw-grilled plate.

When paired with dishes made from seasonal ingredients, the deep flavors of the local sake are further enhanced, elevating your dining experience to something even richer.

We take special care to ensure that guests using our private rooms can dine without being bothered by smoke.

Additionally, when you make a reservation, if you let us know you prefer a non-smoking seat, we can prioritize seating you in a private room that is less affected by smoke. Here are some of our initiatives to ensure you can dine with peace of mind.

  • A Dedicated Smoking Room: For our smoking guests, we have a separate, enclosed smoking room within the restaurant. By asking guests to use this room, we ensure consideration for our non-smoking customers.
  • Smoke-Separation Measures in Private Rooms: Each private room is fitted with a powerful ventilation system, and we have taken measures to minimize the inflow of smoke, even if a smoking area is nearby. We have also considered airflow patterns and arranged the layout to prevent smoke from spreading.
  • A Comfortable Space for Everyone: We implement thorough deodorizing measures during cleaning so that families with children and guests sensitive to tobacco smoke can dine with peace of mind. We strive to maintain a clean and pleasant space where everyone can have a wonderful time.

Practical Steps from Reservation to Your Visit: For the Best Experience

To help you realize the perfect special moment at our restaurant, here are the simple steps from reservation to your visit. A little preparation beforehand will make your day even more enjoyable, so please use this as a reference.

  1. Clarify Your Purpose and Group Size: The First Step to Choosing the Right Room and Course

First, please clarify the purpose of your visit (e.g., business dinner, banquet, reunion, meal with friends) and the number of guests. This will help us suggest the most suitable type of private tatami room in Hikone and recommend the best Hikone banquet course.

  2. Early Booking is Key: Especially Essential on Weekends and During Peak Seasons

Reservations for private rooms, especially on weekends, holidays, and during event periods, tend to fill up quickly. We recommend booking as early as possible to secure your desired room. While we do our best to accommodate last-minute reservations, your options may be limited.

  3. Communicate Your Requests Clearly: Cuisine, Allergies, Surprises, etc.

When booking, please don't hesitate to share your specific requests, such as dietary preferences (disliked ingredients, allergy information), drink preferences (including a desire for specific Shiga's local sake), and whether you're planning any surprises. Informing us in advance allows us to prepare smoothly and help you create an unforgettable day.

  4. Don't Forget to Confirm: A Final Check of Your Reservation Details

Please confirm the final details of your reservation (date, time, number of guests, course, room type, and other requests) about a week or a few days before your visit. If there are any changes, we would appreciate it if you could contact us as soon as possible.

  5. Be Punctual on the Day: Consideration for Other Guests

Arriving at your reserved time allows us to seat you smoothly. If you expect to be late or arrive early, we would be grateful if you could let us know in advance. We appreciate your cooperation, as this also affects reservations for other guests.
