Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

How to enjoy Robata

Robata Story

01

Choose your seat: counter or round table

Across 90 seats there are counter seats, round tables, three table private rooms for six each, and two tatami private rooms for up to 30. For a close view of the straw flames, take the counter.

02

Straight off the fire, taste it plain

Begin at the surface, wrapped in the fragrance of straw. The first plain mouthful tells you what the bonito and the Omi beef taste like on their own.

03

Move through the course with salt and citrus

Partway through, bring in condiments, rock salt and citrus. On the Shiga Mankitsu course, ten dishes at 6,050 yen, the meal runs on to Kurao pork and Omi duck junjun.

04

A cup after walking Hikone Castle

Hikone Castle, Genkyuen and Yumekyobashi Castle Road are a two minute walk back from JR Hikone Station. Our staff suggest the Shiga sake that suits your sashimi or straw-grilled plate.

An Invitation to Elevate Your Hikone Reunion with Wine Pairings

Celebrate the Joy of Reunion in Hikone: We'll Help Organizers Create a Truly Special Day

Reuniting with familiar faces is one of life's most brilliant moments. A Hikone reunion, in particular, where you reconnect with old school friends in the memorable land where you spent those days, will surely be an even more deeply moving experience.

However, for the organizer, worries like How can I plan an event that everyone will enjoy? and Can I create a special, memorable experience? are common. The choice of food, the restaurant's atmosphere, and the drinks that liven up the conversation—only when all these elements come together can the perfect reunion be achieved.

What we want to offer is not just a place to eat. It's an enriching experience that deepens the bonds forged in Hikone and generates energy for the future. To achieve this, we propose a new style of reunion: wine pairing. The delicate flavors crafted by our chefs, who are well-versed in Japanese cuisine, and the marriage with carefully selected wines will surely make your night of reunion unforgettable.

Not Satisfied with Traditional Reunions? A New Proposal for a Hikone Reunion That Breaks the Mold

At the usual izakaya, Let's just start with a beer—do you feel that such commonplace reunions are somewhat lacking? Some friends may have traveled from afar, and because it's a long-awaited reunion, it's only natural to want to add a special touch.

At conventional izakaya parties, food choices can be limited, and drink options are often fixed, sometimes making both the delicious food and conversation feel a bit formulaic. Especially as we get older, our preferences for food and drinks become more refined. We've heard from organizers who wish to realize a more sophisticated adult reunion in Hikone, a place where they can talk and savor to their heart's content in a more elegant space.

So we thought: How can we provide a Hikone reunion where all attendees are truly satisfied and can go home with a smile, saying, I'm so glad I came? One of our answers is wine pairing, which enhances the flavor of the food manifold and makes conversation blossom. Even those who don't usually drink much wine will surely be surprised by its unexpected compatibility with Japanese cuisine.

The Charm of Wine Pairing to Elevate Your Hikone Reunion

When you hear wine pairing, you might think of French or Italian cuisine, but it actually pairs surprisingly well with delicate Japanese food. At our Hikone izakaya, we are exploring this new potential of Japanese cuisine and wine.

The Joy of Discovering the Unexpected Harmony of Japanese Food and Wine

  • The umami of Japanese dashi and the delicate flavors of seasonal ingredients are further enhanced when matched with the right wine. For example, a crisp, dry white wine with light white fish sashimi, or a mellow white or light red wine with simmered dishes, deepens the flavors of both, leading to new discoveries.
  • The exquisite combination of food and drink, something not often experienced in everyday meals, also becomes a great conversation starter, naturally bringing smiles to attendees as they remark, This pairing is amazing!
  • An experienced sommelier can suggest the optimal wine for each dish and enrich the dining experience by sharing stories about the wine and its grape varieties.

The Power of Wine to Spark Conversation and Ease the Organizer's Burden

  • With its diverse aromas and flavors, wine is an appealing drink that naturally stimulates conversation. Questions like What kind of aroma does this wine have? or How does the taste change when paired with this dish? can be icebreakers, even with people you don't talk to often.
  • The time spent choosing a favorite wine from the list is another pleasure of an adult reunion. By having the sommelier serve selected wines in sequence to match the courses, the organizer is freed from the hassle of ordering drinks each time, allowing the event to proceed smoothly.
  • Since we can propose a variety of wines to suit each participant's preference, we can alleviate the organizer's worry of Will everyone be happy? allowing them to relax and enjoy the reunion.

The Secret to Enjoying the Marriage of Hikone Seafood and Wine

The combination of fresh seafood savored in Hikone and wine is a truly blissful moment. Our Hikone seafood dishes are prepared in ways that maximize the natural goodness of the ingredients.

The Magic of White Wine to Enhance Seasonal Fish and Shellfish

In addition to the bounty of Lake Biwa, fresh seafood from the Sea of Japan also gathers in Hikone. A crisp, chilled, dry white wine is an exquisite match for fresh sashimi and grilled fish. The delicate umami and sweetness of the seafood are further enhanced by the acidity and minerality of the white wine, creating an exceptional flavor that spreads through the mouth.

  1. For white fish sashimi: A 'Sauvignon Blanc' with sharp acidity and minerality, or a 'Chardonnay' (aged in stainless steel tanks) with fresh fruitiness.
  2. For shellfish and crustaceans: A 'Sparkling Wine (Brut)' with its charming delicate bubbles, or a slightly aged 'Chablis' will double the umami.
  3. For grilled or simmered fish: We recommend choosing a white wine that complements the dish's flavor, such as a barrel-aged 'Chardonnay' or a slightly rich 'Viognier.'

The Challenge: Pairing Aromatic Straw-Grilled Bonito with Red Wine

Straw-grilling is a cooking method that locks in the ingredient's umami along with a smoky aroma. Our straw-grilled bonito, sourced directly from Kochi, is particularly characterized by its unique fragrance and rich flavor. While it may seem at first that it wouldn't pair well with red wine, it actually creates a wonderful pairing.

  • For straw-grilled bonito: By choosing a red wine with low tannins and a good aroma, such as a light 'Pinot Noir' or a fruity 'Gamay (Beaujolais)', you can enjoy a deep flavor without overpowering the bonito's smokiness and umami.
  • The aroma of the straw and the bouquet of the wine enhance each other, creating a rich harmony on the palate. Enjoying such an unexpected combination is one of the true pleasures of wine pairing.

Make Your Hikone Station Gathering Special: The Harmony of Omi Beef, Shiga's Bounty, and Wine

Located in a prime spot just a short walk from Hikone Station, our izakaya is also perfect for a Hikone Station gathering. In particular, our dishes featuring Shiga's renowned Omi beef and fresh local vegetables pair exceptionally well with wine.

How to Choose a Red Wine to Maximize the Umami of Omi Beef

Omi beef, one of Japan's top three wagyu brands, is known for its fine texture and melt-in-your-mouth sweet fat. The joy of savoring this exquisite flavor with red wine is truly a luxurious experience.

  • For Omi beef steak or roast: A full-bodied red wine that can stand up to the rich meat flavor, such as 'Cabernet Sauvignon' or 'Merlot,' is recommended. The tannins (astringency) harmonize with the fat of the meat, cleansing the palate while further enhancing the umami.
  • For sukiyaki or shabu-shabu: A slightly lighter 'Pinot Noir' or a fruity 'Syrah'—a red wine with a milder taste that complements the Japanese-style seasoning—would also be a good choice.

New Discoveries with Shiga's Seasonal Vegetables and Wine

Seasonal vegetables grown in the rich soil of Omi are served in dishes that showcase their natural qualities. Wine further enhances the inherent sweetness, bitterness, and aroma of the vegetables.

  • For simple vegetable dishes: A fresh 'Rosé' or a 'Sauvignon Blanc' with herbal notes is recommended. The natural flavor of the vegetables and the aroma of the wine blend together beautifully.
  • For grilled vegetables or dishes with root vegetables: A slightly more full-bodied 'Chardonnay' or a light 'red wine' can also create a surprisingly good pairing.
