Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

01

Robata & Warayaki

04

How to enjoy Robata

Robata Story

01

Choose your seat: counter or round table

Across 90 seats there are counter seats, round tables, three table private rooms for six each, and two tatami private rooms for up to 30. For a close view of the straw flames, take the counter.

02

Straight off the fire, taste it plain

Begin at the surface, wrapped in the fragrance of straw. The first plain mouthful tells you what the bonito and the Omi beef taste like on their own.

03

Move through the course with salt and citrus

Partway through, bring in condiments, rock salt and citrus. On the Shiga Mankitsu course, ten dishes at 6,050 yen, the meal runs on to Kurao pork and Omi duck junjun.

04

A cup after walking Hikone Castle

Hikone Castle, Genkyuen and Yumekyobashi Castle Road are a two minute walk back from JR Hikone Station. Our staff suggest the Shiga sake that suits your sashimi or straw-grilled plate.

A Culinary Tale: Your Guide to a Successful Hikone Alumni Reunion

A Culinary Tale for a Successful Hikone Reunion: A Special Time Woven from a Commitment to Ingredients

Reuniting with friends after a long time is an irreplaceable joy. The time spent reminiscing about school days and catching up on recent news is etched deeper in our hearts now that we are adults. A special night spent with dear old friends, particularly in the form of a 'Hikone alumni reunion,' is something everyone looks forward to with excitement. However, for the organizers, figuring out how to stage this precious time and ensure all attendees enjoy themselves to the fullest can be a source of considerable worry.

In this column, we offer a proposal for those planning a reunion in Hikone: how to create a memorable banquet centered on a 'commitment to ingredients.' Delicious food is like magic, sparking conversation and bringing out smiles. We sincerely engage with our ingredients day in and day out, hoping that your cherished reunion will become an even more brilliant memory, enhanced by the deliciousness of our cuisine.

How to Ensure a Successful Hikone Reunion: Solving the Organizer's Worries

Organizing an alumni reunion brings great joy, but also a great deal of responsibility. Choosing a venue that satisfies all attendees is perhaps one of the biggest challenges for an organizer. You wouldn't want such a special reunion to be marred by disappointments like 'the food wasn't what I expected' or 'the atmosphere of the place wasn't right.' Having supported numerous reunions, we have come to understand and address the various concerns that organizers face.

For instance, do any of these worries sound familiar?

  • Attendees have such varied tastes, I don't know what kind of food to choose.
  • One of my friends has allergies, and I'm anxious about finding a restaurant that can accommodate them.
  • Where can I find a restaurant with private rooms spacious enough for a large group?
  • I'm looking for a place near Hikone Station with good access that stays open late.
  • I want to find a place that offers high-quality food and service within our budget.

These questions and concerns are crucial points for a successful reunion. In particular, food is a major factor that greatly influences satisfaction at a reunion, and a commitment not just to the quality of the dishes but also to the ingredients used resonates deeply with guests. We have made meticulous efforts and preparations to meet these demands.

In the following sections, we will introduce in detail the 'commitment to ingredients' we hold to make your 'Hikone alumni reunion' truly special. We hope the emotional experience born from food will make your reunion even richer.

Creating a Memorable Reunion in Hikone: Our Commitment to Ingredients

We believe that the cuisine gracing a special night like a reunion should not just fill stomachs but be etched in the heart as a memorable experience. That is why we place the utmost importance on our unwavering commitment to 'ingredients,' the foundation of our cooking. By combining the blessings of Hikone's rich nature with seasonal delicacies carefully selected from all over the country, we offer a variety of gastronomic delights that stimulate the five senses.

The Moving Flavors of Exquisitely Selected Seafood

Fresh seafood holds a special place in Japanese food culture. To ensure our guests enjoy the finest seafood dishes, we visit the market every morning to select and procure the best fish and shellfish of the day. We make no compromises, from freshness management to cooking methods, to deliver the blessings of the sea, which change with the seasons, in their most delicious form.

  • Dishes that Highlight Seasonal Seafood: We use seasonal seafood throughout the year, such as Sakura-dai (cherry sea bream) in spring, Hamo (pike conger) in summer, Modori-gatsuo (returning bonito) in autumn, and Fugu (pufferfish) and crab in winter. To maximize the natural umami of each ingredient, we offer them in the optimal preparation method, be it sashimi, grilled, stewed, or fried.
  • Freshness Direct from the Source: By sourcing directly from trusted fishing ports and producers nationwide, we deliver seafood to your table at peak freshness. The translucent flesh, the firm texture, and the rich flavor that fills your mouth are, in a word, moving.
  • Expert Craftsmanship: The freshly procured seafood is carefully prepared and cooked by our skilled chefs, who understand the unique characteristics of each ingredient. The delicate knife work, precise heat control, and balanced seasoning all come together, making each dish a culinary work of art.

The time spent chatting with friends around a table of fresh seafood at your Hikone reunion is sure to become an unforgettable memory.

Savoring the Bounties of Omi: The Charm of Local Ingredients

As an establishment in Hikone, we hold deep respect for the bountiful ingredients that Shiga Prefecture is proud of and actively incorporate them into our menu. The blessings of Lake Biwa, vegetables grown in rich soil, and the nationally renowned Omi beef. • The Deep Flavor of Omi Beef: Counted as one of Japan's top three wagyu brands, Omi beef is characterized by its beautiful marbling, melt-in-your-mouth texture, and richly flavored lean meat. We offer Omi beef, carefully selected by connoisseurs with years of experience, in various styles such as steak, shabu-shabu, and sukiyaki. Enjoy it as a special 'feast' at your reunion.
  • Seasonal Local Vegetables: Fresh, seasonal vegetables grown in Shiga Prefecture are bursting with vibrant flavor and freshness. We serve vegetables cultivated with care by local farmers in dishes that highlight their natural taste, such as salads, ohitashi (blanched greens), and tempura. These colorful and healthy dishes are sure to please attendees of all ages.
  • Blessings from Lake Biwa: The endemic fish and shellfish from Lake Biwa are also essential to Hikone's food culture. Depending on the season, we may offer local dishes featuring these blessings, providing a culinary experience unique to Hikone.
