Our story
Located in the heart of Hikone, Shiga, Uomaru is a seafood izakaya where fresh fish and carefully selected sake meet the craft of robatayaki grilling.
Sashimi finished by skilled hands from fish delivered straight from the port, bonito from Kochi, and Omi beef from Shiga — grilled dynamically right before you over straw and charcoal.
A calm Japanese space with lively counter seats and relaxing private rooms — for dates, family dinners, and company banquets alike.
Commitment
In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.
Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.
We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.
Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.
Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.
A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

How to enjoy straw-grilling and robata
Across 90 seats there are counter seats, round tables, three table private rooms for six each, and two tatami private rooms for up to 30. For a close view of the straw flames, take the counter.
Begin at the surface, wrapped in the fragrance of straw. The first plain mouthful tells you what the bonito and the Omi beef taste like on their own.
Partway through, bring in condiments, rock salt and citrus. On the Shiga Mankitsu course, ten dishes at 6,050 yen, the meal runs on to Kurao pork and Omi duck junjun.
Hikone Castle, Genkyuen and Yumekyobashi Castle Road are a two minute walk back from JR Hikone Station. Our staff suggest the Shiga sake that suits your sashimi or straw-grilled plate.

Column
In Shiga Prefecture, blessed with abundant nature, and the historic land of Hikone, many guests wish to savor seafood cuisine to their heart's content. To meet these expectations, our restaurant is in constant pursuit of the best seasonal flavors. We have sincerely addressed the anticipation encapsulated in the words Hikone Seafood for fresh ocean delicacies. We strive day and night to deliver a moving experience woven from the seasonal bounties of the sea for everyone wishing to spend a special time in Hikone. In this column, we will delve deep into the seasonal seafood dishes we proudly offer and how to enjoy them.
Even if you think, I want delicious seafood in Hikone, you might be unsure where to go or what to eat in which season. While various seafood are available in the market year-round, finding that exceptional taste that can only be experienced at a specific time requires deep knowledge of the ingredients and the technique to present them in their best form.
By thoroughly pursuing these elements, we strive to provide our customers with the ultimate Hikone Seafood experience. We don't just serve fresh fish; we bring out its inherent umami to the fullest, sublimating it into a memorable dish. That is the value we promise our customers.
At our restaurant, skilled chefs with a discerning eye select carefully chosen seafood sent directly from fishing ports across Japan. The true pleasure of Hikone Seafood lies in the flavors that change with the seasons. Here, we introduce how we offer the bounties of the sea throughout the four seasons.
Spring is when seafood with a delicate flavor, reminiscent of life's first breath, comes into season. A representative example is the Sakura-dai (Cherry Blossom Sea Bream), which firms up and takes on a faint pink hue during the cherry blossom season. Its elegant sweetness and chewy texture are exceptional when enjoyed as sashimi. Additionally, the Hatsu-gatsuo (first bonito of the season), which travels north with the arrival of spring, has a unique umami within its light red flesh and pairs perfectly with straw-grilling.
Pairing these dishes with Shiga's local sake, which evokes the breath of spring, deepens their flavor even further.
Summer brings robust seafood with concentrated umami into season. Squid, with its firm, crisp texture, and fatty Aji (Horse Mackerel) showcase their deliciousness as sashimi or salt-grilled. And the luxury of summer is Uni (Sea Urchin). Its rich sweetness and scent of the ocean are truly gems of the sea.
In summer, we create a cool summer evening by pairing these with light, crisp local sake from Shiga or chilled sake.
Autumn is the season for rich, fatty seafood, perfect for the season of hearty appetites. Of particular note is the Modori-gatsuo (returning bonito), which has turned back from its northward journey. It has stored plenty of fat, featuring a melt-in-your-mouth texture and deep umami. Firm-fleshed Saba (Mackerel) is another representative autumn taste. You can enjoy its deliciousness as vinegared mackerel or salt-grilled.
On long autumn nights, please spend a leisurely time with mellow, deep-flavored local Shiga sake or warm sake.
In winter, the cold tightens the flesh of seafood, concentrating an exceptional umami. The king of winter delicacies is Kani (Crab). Its rich sweetness and meltingly tender flesh are a luxury to be enjoyed in a hot pot, grilled, or as sashimi. Fatty Buri (Yellowtail) is delicious not only as sashimi but also in various dishes like Buri-daikon (simmered with daikon radish) or teriyaki.
In the cold winter, please enjoy the bounty of the winter sea to your heart's content with full-bodied local Shiga sake or hot sake.
Among our many seafood dishes, the one we especially want to offer is our Straw-Grilled Bonito Direct from Kochi. This dish is truly the face of our Hikone Seafood offerings and has been highly praised by many of our customers.
Straw-grilling is a traditional cooking method from Kochi that instantly sears the surface of fresh bonito at high temperatures. This special method locks in the bonito's umami while imparting the unique, fragrant aroma of straw. The outside is aromatic, while the inside remains moist, allowing you to enjoy a deep flavor that sets it apart from typical seared bonito.
Bonito has two distinct seasons: the Hatsu-gatsuo of spring and the Modori-gatsuo of autumn, each with its own charm. Hatsu-gatsuo is characterized by its light red flesh, and straw-grilling brings out its delicate umami. In contrast, Modori-gatsuo has stored plenty of fat, offering a rich umami and a melt-in-your-mouth texture. No matter which season you visit, we will serve the best bonito of that time as our Straw-Grilled Bonito Direct from Kochi.
What further enhances the deliciousness of straw-grilled bonito are the condiments and local Shiga sake. We recommend enjoying it with fresh condiments like sliced garlic, green onions, myoga ginger, and shiso leaves, along with ponzu or our special sauce. The fragrant aroma of the straw-grilling and the umami of the bonito pair well with a crisp, dry local sake from Shiga. Our staff will suggest the perfect pairing for the day's bonito, so please feel free to ask.
To fully savor delicious seafood, the atmosphere is just as important as the food itself. As a Hikone Private-Room Izakaya, we provide elegant private rooms for our guests to spend a special time.
Our private rooms allow you to enjoy your meal while conversing with your important companions without worrying about other guests. They are perfect for a variety of occasions, such as business entertaining, anniversaries, family dinners, and important gatherings with friends.
Shiga Prefecture is blessed with rich water and fertile land, producing many unique local sakes. Our seafood dishes show a perfect affinity with these local sakes from Shiga. Light, dry sakes enhance the delicate flavors of the fish, while rich, full-bodied sakes deepen the umami of fatty fish. The pairing of seasonal seafood and local sake is the very essence of enjoying Japanese food culture.
In addition to Hikone Seafood, you can also enjoy Shiga's other masterpiece, Omi Beef, at our restaurant. Characterized by its fine-grained texture and meltingly sweet fat, Omi beef offers a blissful taste different from that of seafood. You can fully enjoy Shiga's two great delicacies in a combination tailored to your preference, such as having seafood as the main course with a little Omi beef to finish, or enjoying seared Omi beef or steak as an appetizer.
Located near Hikone Station, our restaurant has been cherished by the local community as an Asahi-cho Izakaya. While feeling the vibrancy of Hikone, step inside to a calm and relaxing space where you can leisurely enjoy seasonal flavors.
Hikone is a region blessed with the rich bounty of Lake Biwa and the produce of the surrounding satoyama (village foothills). In addition to fresh seafood from all over Japan, we actively incorporate lake fish caught in Lake Biwa and fresh vegetables from local partner farms. This allows us to offer dishes that are truly conscious of local production for local consumption, full of Shiga's unique seasonal feel.
For first-time visitors or those unsure what to choose, we recommend our Omakase Course, which allows you to enjoy the best of the season's seafood. The content changes with each season, featuring a careful selection of the most delicious ingredients of the time, so you can discover something new and exciting every time you visit.
It is also possible to pair these courses with carefully selected local Shiga sake. We will propose the best sake according to your preferences.
Here is some advice to help you enjoy the best Hikone Seafood experience at our restaurant. We hope you will use this information to have a memorable time.
We can be very busy, especially on weekends, holidays, and during peak seasons. As fresh seafood may be limited in quantity, we recommend making a reservation in advance. If you would like a private room, contacting us early will ensure availability.
Reservation Tips:
Our official website and social media channels regularly post information about seasonal limited menus and daily recommendations. Checking this information before your visit might lead you to a special dish you can only taste at that time.
When you visit, please feel free to speak with our staff. We will be happy to explain in detail about the day's fresh fish and seasonal ingredients. We can also suggest local Shiga sake that pairs well with your meal and recommend dishes tailored to your taste.
Also, taking advantage of our location as an Asahi-cho Izakaya, it is quite atmospheric to take a stroll through the streets of Hikone before your meal. Concluding your trip after sightseeing at Hikone Castle with our seasonal seafood would also be wonderful.
We hope that through this column, we have been able to convey even a little of how much passion we pour into the keyword Hikone Seafood and what kind of experience we wish to provide our customers.
The bounty of the sea that changes with the seasons, the fragrant umami woven by straw-grilled bonito direct from Kochi, and the exquisite harmony with local Shiga sake. You can savor all of this to your heart's content in the calm atmosphere unique to a Hikone Private-Room Izakaya. As an Asahi-cho Izakaya, we will continue to strive to be loved by the local community and to convey the splendor of Hikone's food culture to visitors from afar.
We consider it our mission not just to serve food, but to create an unforgettable culinary experience for our customers. If you are looking to find truly delicious seafood in Hikone and want to spend a special time with someone important, please visit our restaurant. We sincerely look forward to welcoming you.
