Our story
Located in the heart of Hikone, Shiga, Uomaru is a seafood izakaya where fresh fish and carefully selected sake meet the craft of robatayaki grilling.
Sashimi finished by skilled hands from fish delivered straight from the port, bonito from Kochi, and Omi beef from Shiga — grilled dynamically right before you over straw and charcoal.
A calm Japanese space with lively counter seats and relaxing private rooms — for dates, family dinners, and company banquets alike.
Commitment
In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.
Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.
We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.
Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.
Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.
A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

How to enjoy straw-grilling and robata
Across 90 seats there are counter seats, round tables, three table private rooms for six each, and two tatami private rooms for up to 30. For a close view of the straw flames, take the counter.
Begin at the surface, wrapped in the fragrance of straw. The first plain mouthful tells you what the bonito and the Omi beef taste like on their own.
Partway through, bring in condiments, rock salt and citrus. On the Shiga Mankitsu course, ten dishes at 6,050 yen, the meal runs on to Kurao pork and Omi duck junjun.
Hikone Castle, Genkyuen and Yumekyobashi Castle Road are a two minute walk back from JR Hikone Station. Our staff suggest the Shiga sake that suits your sashimi or straw-grilled plate.

We have no car park of our own; please use a nearby coin park.
The Shiga Full-Experience Course — ten dishes, 6,050 yen including tax — runs from Kurao pork shabu-shabu salad and salt-grilled Omi shrimp to fried simmered burdock and Omi duck jun-jun. From the Koto area of Shiga, including Maibara, it is a single train ride to Hikone Station and about 2 minutes on foot. Inside, smoking is separated: the first floor is non-smoking and the second floor allows smoking (depending on availability we cannot always seat you upstairs).

Column
Hikone is a city where history and nature breathe. When spending time here with important people, the choice of beverages is just as crucial as the cuisine. At our restaurant, we offer local Shiga sake, with its deep, distinctive flavor, and a selection of fine wines chosen to complement our dishes. We hope to provide a memorable dining experience that will make you think, I never knew I could enjoy Hikone this way.
Whether you're looking for a banquet course in Hikone, a quiet izakaya for business entertainment, or a venue for a class reunion, our restaurant is the perfect choice. To meet the diverse needs of our guests, we offer spacious private tatami rooms and provide a comfortable, smoke-separated environment. In this article, we'll introduce the charm of local Shiga sake, which pairs beautifully with Japanese cuisine, and the joy of discovering surprising wine pairings, offering tips to enrich your stay in Hikone.
At any gathering, each guest has different preferences. Some may love sake, while others prefer wine. We often fall into the mindset that Japanese food goes with sake and Western food with wine, but is that always true? We aim to bring out the best in each beverage and create new harmonies with Japanese cuisine. We are here to help you find the perfect drink so you can fully enjoy your precious time in Hikone.
Local Shiga sake is a true reflection of the region's terroir, brewed with pure water from Lake Biwa's sources and rice grown on fertile land, using long-standing traditions and techniques. Each brewery has its own philosophy, creating sakes with unique character. The flavors are diverse, ranging from light and dry to rich and savory.
Local Shiga sake is brewed with rice and water blessed by Lake Biwa. The region's unique climate and natural features create a distinctive flavor and aroma unlike any other.
We carefully select the best local Shiga sakes for each season, always keeping several varieties available. We will recommend the perfect one for you based on its compatibility with your meal.
For example, a crisp Junmai Ginjo with a clean finish pairs well with delicate Japanese dishes featuring Omi ingredients. For savory stews and grilled items, we recommend a Junmai sake with a robust rice umami.
To fully enjoy local Shiga sake, pairing it with food is key. For instance, a fresh, crisp, and dry Junmai Ginjo will enhance the umami of delicate white fish sashimi. On the other hand, pairing a full-bodied Junmai or an aged sake with fatty meats or rich dishes brings out the best in both, creating a new and moving experience on your palate.
When you choose one of our Hikone banquet courses, our staff will suggest the optimal local Shiga sake to match the dishes. You can also enjoy a tasting flight to compare several options based on your preferences. Please enjoy the depth of Japanese cuisine and the diversity of local Shiga sake to your heart's content.
While many associate Japanese food with sake, wine can also create wonderful pairings with it. In particular, wines crafted to suit Japan's climate or those that don't overpower the delicate flavors of Japanese cuisine can create a surprisingly harmonious match. Our staff, which includes certified sommeliers, has curated a selection of wines to help you make new discoveries.
The delicate umami of Japanese cuisine and the complex aromas of wine create a synergistic effect, enhancing each other.
We go beyond the basic theory of white wine for seafood and red wine for meat, also considering compatibility with Japanese seasonings like soy sauce, miso, and dashi.
For example, a mineral-rich Koshu wine or a lightly sparkling wine enhances the fresh flavor of sashimi. A Chardonnay with good acidity and body pairs surprisingly well with fried dishes like tempura.
When using our restaurant for business entertainment in Hikone, wine pairings can enrich conversation and make the occasion even more special. By suggesting wines that match each course while considering your guests' preferences, you can convey thoughtful hospitality and leave a lasting impression.
For class reunions in Hikone, offering both local Shiga sake and wine allows guests to choose according to their tastes, sparking conversations. The combination of Japanese food and wine provides a new dining experience that can be enjoyed across generations.
We provide the ideal space and service to suit our customers' various needs. We'll suggest the perfect drink based on your preferences and mood.
Try a Tasting Comparison: If possible, consider trying a few different local Shiga sakes or wines that catch your eye. We offer some by the glass, so please ask. Experiencing the differences in flavor will allow you to enjoy the world of drinks more deeply.
Test the Pairing with Your Food: Once your dishes arrive, be sure to try them with your local Shiga sake or wine. Use all your senses to notice the changes in aroma and the expansion of flavor in your mouth. An unexpected combination can sometimes be the best discovery.
