Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

How to enjoy Robata

Robata Story

01

Choose your seat: counter or round table

Across 90 seats there are counter seats, round tables, three table private rooms for six each, and two tatami private rooms for up to 30. For a close view of the straw flames, take the counter.

02

Straight off the fire, taste it plain

Begin at the surface, wrapped in the fragrance of straw. The first plain mouthful tells you what the bonito and the Omi beef taste like on their own.

03

Move through the course with salt and citrus

Partway through, bring in condiments, rock salt and citrus. On the Shiga Mankitsu course, ten dishes at 6,050 yen, the meal runs on to Kurao pork and Omi duck junjun.

04

A cup after walking Hikone Castle

Hikone Castle, Genkyuen and Yumekyobashi Castle Road are a two minute walk back from JR Hikone Station. Our staff suggest the Shiga sake that suits your sashimi or straw-grilled plate.

Japanese Cuisine and Wine in a Private Room Izakaya in Hikone

Savor a New Harmony of Japanese Cuisine and Wine at Our Private Dining Izakaya in Hikone

To our guests visiting Hikone City, Shiga Prefecture, and to locals seeking a special moment. Our private dining izakaya in Hikone aims to offer more than just delicious food; we strive to provide a memorable 'culinary experience'. While beer and sake are the staples of an izakaya, our specialty dishes hold a surprisingly wonderful encounter with wine. For those who wish to dine leisurely in a private space, our private tatami rooms in Hikone are the perfect setting.

Fresh seafood, bountiful blessings from the land, and local sake nurtured by Shiga's history. Alongside these, the 'pairing of Japanese food and wine,' which has gained attention in recent years, holds the potential to multiply the delight of dining. In this article, we will delve deeply into the charm of our signature dishes and the wines that complement them at our private dining izakaya in Hikone.

Choosing Wine at an Izakaya: Do You Have These Concerns?

  • I'm not sure which wines pair well with Japanese food.
  • I feel like ordering wine at an izakaya is out of place.
  • The food is so delicious, I'd like to try enjoying it with a different kind of drink.
  • I want to choose a wine for a banquet course that everyone will enjoy, but I don't know how.

Rest assured. At our private dining izakaya in Hikone, we have devised various ways to resolve such questions and concerns, offering the optimal pairing for each customer. Our private tatami rooms in Hikone provide the perfect stage to savor the marriage of food and wine to your heart's content, without worrying about your surroundings.

A Fusion of Tradition and Innovation: The World of Wine Pairing Proposed by Our Hikone Private Dining Izakaya

At our private dining izakaya in Hikone, we aim to offer our customers an unprecedented gastronomic experience by adding a new perspective—wine—to traditional Japanese izakaya cuisine. While Japanese food and wine may seem like a combination of different cultures at first glance, they actually have a profound compatibility that brings out the best in each other.

The Power of Wine to Enhance a Dish's Charm

Wine, with its aroma, acidity, tannins, and mouthfeel, enriches the flavors of a dish and can sometimes create entirely new tastes. Beyond the basic pairings like white wine with seafood and red wine with meat, a more nuanced wine selection is possible depending on the ingredients, cooking methods, and seasonings. The staff at our private dining izakaya in Hikone will assist you in choosing the perfect wine to further enhance your meal according to your preferences.

  • Respect for Ingredients: We carefully select wines that do not overpower the natural flavors of our choice ingredients, such as straw-seared bonito directly from Kochi and Omi beef.
  • Harmony with Seasoning: We suggest wines that match the intensity of the dish's flavor, whether it's a soy-based Japanese seasoning or a slightly sweet sauce.
  • Aromatic Synergy: The fragrant aroma of straw-searing or the fresh scent of the sea from seafood, combined with the fruity or spicy notes of wine, creates a sensational harmony.

Here in Hikone, the warmth of a traditional izakaya merges with a sophisticated wine culture. This is the special experience that can only be found at our private dining izakaya in Hikone.

The Perfect Glass to Accompany Straw-Seared Bonito from Kochi: The Surprising Charm of Wine

One of our signature dishes, 'Straw-Seared Bonito Directly from Kochi,' features fresh bonito seared boldly over straw, characterized by its fragrant aroma and concentrated umami. It's exciting just to imagine what kind of wine would pair with this powerful flavor.

The Optimal Pairing for Straw-Seared Bonito and Wine

Generally, sake pairs well with straw-seared bonito, but you can also find excellent matches in the world of wine. The key is to balance the fattiness of the bonito, the fragrance of the straw, and the accompanying condiments.

  • Light-Bodied Red Wine: A lighter red wine like Pinot Noir enhances the rich umami of the bonito and the fragrance of the straw, harmonizing with the dish without being too heavy. Its fruitiness will further accentuate the bonito's flavor.
  • Crisp White Wine: White wines with herbal aromas and sharp acidity, such as Sauvignon Blanc or Koshu, are also recommended. They cleanse the palate of the bonito's oiliness and refresh your mouth. They pair exceptionally well with condiments like green onions and garlic.
  • Rosé Wine: It might seem surprising, but a dry rosé with moderate fruitiness and acidity also makes a wonderful pairing with straw-seared bonito. With a balance that captures the best of both red and white, it complements a wide range of flavors.

At our private dining izakaya in Hikone, we offer a wide variety of these wines by the glass for you to enjoy. Please savor the deep flavor of our straw-seared bonito from Kochi along with the discovery of a new wine. Here in Hikone, you can fully indulge in the new story woven by bonito and wine.

Shiga's Pride: How to Choose a Wine to Elevate Omi Beef

'Omi beef,' the branded beef that is the pride of Shiga, is characterized by its fine texture and sweet, melt-in-your-mouth fat. We offer this high-quality Omi beef prepared in various ways. What kind of wine can bring out the full charm of Omi beef?

The Secret to Wine that Enhances the Deliciousness of Omi Beef

While Omi beef pairs wonderfully with local Shiga sake, it reveals a different character when combined with wine. Its compatibility with red wine, in particular, is outstanding.

  • Full-Bodied Red Wine: For Omi beef steak or charcoal-grilled dishes, a red wine with a solid structure and concentration, such as Cabernet Sauvignon, Merlot, or Syrah, is ideal. The wine's tannins interact with the fat of the Omi beef, spreading a rich umami flavor in your mouth.
  • Aged Red Wine: Choosing a slightly aged red wine allows its complex aromas to harmonize with the deep flavors of Omi beef, creating an even more elegant taste. The earthy nuances and leather-like scents of the red wine match perfectly with the aged notes of the beef.
  • For Omi Beef Sukiyaki and Shabu-Shabu: For the sweet and savory sukiyaki, a fruit-forward Zinfandel or even a slightly sweet Port wine can be an enjoyable and surprising combination. For lighter preparations like shabu-shabu, a light-bodied red wine or a Chardonnay with subtle oak notes is also worth trying.

At our private dining izakaya in Hikone, we will suggest the perfect wine to maximize the deliciousness of Omi beef right at your table. Enjoy the luxurious combination of Omi beef and exquisite wine, along with the beautiful scenery of Hikone. A special pairing experience that can only be found at our private dining izakaya in Hikone awaits.

Tips for Choosing the Right Wine for a Banquet Course

  2. Choose a Versatile Wine that Complements the Food: For example, a light-bodied red wine (like Pinot Noir) or a dry, fruity white wine (like Chardonnay or Sauvignon Blanc) pairs well with a wide range of dishes and is pleasing to most people.
  3. Consult with the Staff: Our staff is well-versed in the menu for our Hikone banquet courses and can suggest the best wine for each dish. Please feel free to consult with us about your budget and your guests' preferences.
  4. Consider Non-Alcoholic Options: For those who don't prefer wine or do not drink alcohol, we also offer a rich selection of delicious non-alcoholic beverages.

Practical Steps to Find Your Own Perfect Pairing

Tips for Enjoying Your First Wine Pairing

  1. Start with a Small Amount: If a wine catches your eye, start by ordering a small glass. Trying various types will help you discover your preferences and how they match with the food.
  2. Actively Ask for Staff Recommendations: Our staff has extensive knowledge of both food and wine. Don't hesitate to ask questions like, 'What wine goes well with the straw-seared bonito from Kochi?' or 'What about for this Omi beef dish?' You're sure to make new discoveries.
  3. Verbalize the Pairing: Try to put your feelings into words, such as, 'This wine brings out the sweetness of the Omi beef fat,' or 'This white wine highlights the aroma of the straw-seared bonito.' This will help you when choosing wine next time.
  4. Consider Others' Opinions: When you visit for a Hikone banquet course, listen to your friends' opinions. Sharing your different perceptions can deepen your appreciation for the complexities of pairing.
  5. Broaden Your Wine Horizons: While it's easy to stick to the same wine, trying a type you don't usually drink can be a great experience. You might just find a new favorite.
