Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

How to enjoy Robata

Robata Story

01

Choose your seat: counter or round table

Across 90 seats there are counter seats, round tables, three table private rooms for six each, and two tatami private rooms for up to 30. For a close view of the straw flames, take the counter.

02

Straight off the fire, taste it plain

Begin at the surface, wrapped in the fragrance of straw. The first plain mouthful tells you what the bonito and the Omi beef taste like on their own.

03

Move through the course with salt and citrus

Partway through, bring in condiments, rock salt and citrus. On the Shiga Mankitsu course, ten dishes at 6,050 yen, the meal runs on to Kurao pork and Omi duck junjun.

04

A cup after walking Hikone Castle

Hikone Castle, Genkyuen and Yumekyobashi Castle Road are a two minute walk back from JR Hikone Station. Our staff suggest the Shiga sake that suits your sashimi or straw-grilled plate.

Elevate Your Hikone Evening with Shiga Local Sake and Wine

In Hikone, when you're spending a special time with important people, do you ever wonder, What kind of food and drinks should I choose to make this moment even more memorable? Especially if you want to fully savor the unique charms of Shiga, Shiga local sake is a must. In recent years, the combination of Japanese cuisine and wine has gained significant attention. Here, we introduce the secret to transforming your banquets, business dinners, and class reunions into unforgettable memories through a dining experience where tradition and innovation merge in Hikone.

Our restaurant, against the backdrop of Hikone's rich food culture, offers carefully selected Shiga local sake and wines specifically chosen to complement Japanese cuisine. Beyond simply delicious food, we prioritize creating the best experience tailored to each customer's purpose and preferences. In this article, we will thoroughly answer your questions, from the profound depth of Shiga local sake to surprising Japanese food and wine pairings, and the appeal of our Hikone private tatami rooms.

The Profound Flavors and Selection of Shiga Local Sake

Shiga Prefecture, blessed with abundant water resources and fertile land, has a long history of thriving sake brewing. The rich natural environment of Lake Biwa has given birth to a diverse range of unique Shiga local sake. Our selection includes not only breweries from our local Hikone but also carefully chosen brands from across Shiga Prefecture.

The Charm of Seasonal Shiga Local Sake

  • Spring New Sake: Brewed during winter, new sake is characterized by its fresh and floral aroma. When paired with seasonal spring ingredients, such as local wild vegetables, its refreshing taste that spreads in the mouth is exceptional.
  • Summer Nama-zake / Genshu: For the hot season, we recommend nama-zake (unpasteurized sake) that captures the fresh flavor directly from pressing, or genshu (undiluted sake) which has no water added. Enjoy it chilled with ayu (sweetfish) from Lake Biwa or river fish dishes from the Kohoku region.
  • Autumn Hiyaoroshi: Hiyaoroshi, matured over the summer, boasts a mellow and deep flavor. It pairs exceptionally well with Omi beef sukiyaki or local mushroom dishes.
  • Winter Kan-zake (Warm Sake): In the cold winter, slowly warmed kan-zake truly warms you to the core. Robust junmai-shu (pure rice sake), for example, complements rich miso hot pot dishes or wild game, enhancing each other's umami.

How to Select Shiga Local Sake to Enhance Your Meal

Shiga local sake, with its diverse flavor profiles, can complement any dish. From light and dry varieties for delicate seafood to richly aromatic ones for hearty meat dishes, its appeal expands infinitely depending on the pairing.

  1. Match the intensity of the dish's seasoning: For light white fish sashimi, a crisp junmai ginjo-shu is recommended. Conversely, for the sweet and savory Omi beef shigure-ni (simmered beef), a junmai-shu with a strong rice umami or a matured koshu (aged sake) is an excellent match.
  2. Consider the ingredients' flavor and aroma: For dishes with distinctive flavors like funa-zushi (fermented sushi with crucian carp), a unique junmai ginjo-shu or a yamahai-style local sake with its characteristic aroma would be a good choice to embrace and enhance that flavor.
  3. Value seasonality: Pairing seasonal ingredients with the appropriate Shiga local sake for that time of year will further enrich your meal. Our restaurant carefully selects and suggests the most recommended sake for each season, so please feel free to ask.

Our restaurant will suggest the best Shiga local sake to match your preferred taste and the dishes you order. We also have limited edition sakes sourced directly from visits to local Hikone breweries, so please do not hesitate to inquire.

The Unexpected Encounter of Japanese Cuisine and Wine: Discovering New Pairings in Hikone

While Japanese cuisine is often strongly associated with sake, the pairing of Japanese food and wine has recently garnered attention. The diverse flavors of wine can further enhance the delicate tastes of Japanese cuisine, creating surprising marriages. Why not experience a new harmony of Japanese food and wine in Hikone?

How to Choose Wine to Complement Japanese Cuisine

Pairing Japanese cuisine with wine might seem challenging at first, but if you grasp a few key points, the enjoyment expands infinitely. Our restaurant features chefs deeply familiar with Japanese cuisine who collaborate with wine experts to suggest the optimal pairings for our guests.

  • White Wine and Seafood: Japanese seafood is characterized by its delicate flavor. Crisp, dry white wines such as Koshu or Chardonnay do not overpower the flavors of dishes like sashimi, grilled fish, or tempura; instead, they enhance their umami. Particularly, wines with citrus aromas, akin to squeezing lemon, can mitigate any fishy notes and add freshness to seafood dishes.
  • Light Red Wine and Meat Dishes: For high-quality red meats like Omi beef or roasted duck, light-bodied red wines such as Pinot Noir or Gamay pair wonderfully. Their berry aromas and subtle tannins bring out the meat's umami and the sweetness of its fat, creating an exquisite balance in the mouth.
  • Sparkling Wine with Fried and Simmered Dishes: While often considered an aperitif, sparkling wine is also an excellent match for fried and simmered dishes. Especially with the light batter of tempura or the gentle flavors of simmered dishes prepared with dashi, the bubbles of sparkling wine refresh the palate and stimulate the appetite.

Special Marriages of Hikone Ingredients and Wine

Our restaurant also focuses on pairing Hikone's unique ingredients with wine. We offer new discoveries by combining fresh local vegetables and dishes utilizing the bounty of Lake Biwa with wines from around the world.

  1. Omi Rice Risotto and Chardonnay: For risotto that leverages the sweetness and umami of Omi rice, a barrel-aged Chardonnay with its nutty aroma and rich flavor adds depth.
  2. Salt-Grilled Wild Sweetfish from Lake Biwa and Rosé Wine: The pleasant bitterness and savory aroma of sweetfish are surprisingly well-matched by a rosé wine with fruity notes like strawberry or raspberry. The wine's acidity cleanses the palate of the fish's fat, leaving an elegant finish.
  3. Omi Vegetable Bagna Càuda and Sauvignon Blanc: The crisp texture and natural sweetness of fresh Omi vegetables are complemented by the refreshing, herbal aroma of Sauvignon Blanc.

If you're unsure about wine selection, our staff will carefully explain and recommend options based on your preferences and dishes. Please feel free to ask.
